Eating for Health - Fudge Superfood

Radical Fudge Super Food Supplement

Ingredients
1/2 cup organic virgin coconut oil (semi-solid works best, chill slightly in warmer weather)
2-3 tablespoons black strap molasses
2 tablespoons Berry Radical Antioxidant Super food
2 tablespoons organic carob powder
1 tablespoon organic kelp powder

Method
1. Place ingredients together in a bowl and mix together with a spoon.
2. When combined spoon into mini paper party cases or small ice-cube moulds and freeze to set. Can also put into cubes like fudge when almost solid.
3. Store in the fridge or freezer.
4. These will start to melt when left at room temperature so best eaten soon after removing from the fridge or freezer.

Variation
Reduce carob to 1 tablespoon and add 1-2 tablespoons freshly ground chia seeds or freshly ground flax seed or ground almonds.

Tips
Make in heart shaped moulds and as you eat them remind yourself "Because I love myself I nourish my body with super foods." Also lovely to give to children as nutritious treats made with love.

Sarah's Super Guac

Avocado Guacamole Dip with Probiotics & Super Greens

 

Ingredients
3-4 medium avocados
1 bell pepper
1/2 small onion
1 clove garlic 
3 tablespoons lemon juice
Salt and pepper

Method
1. Blend all ingredients to your desired consistency.
2. Serve with fresh veggies, corn chips rice crackers, pita bread or whatever takes your fancy!

Eating for Health - Alkalising Pudding

Key Lime Pudding with Deep Green

Deep Green Alkalising Super Food is genuine grass juice powder.
Ingredients - Serves 1
1 avocado
1 ripe banana
juice of half a lemon and two limes

Method
Mix in blender until smooth. Pour into a cup or glass and enjoy!

Eating for Health - Truffles

Teresa's Terrific Berry Radical Truffles

Ingredients - makes 10-12
1/2 cup biscuit crumbs
1 1/2 teaspoons cocoa
2 tablespoons coconut
2 tablespoons condensed milk
extra coconut

Method
1. Mix all ingredients, except extra coconut.
2. Roll into 10-12 balls
3. Quickly toss in extra coconut.
4. Firm in the refrigerator if required.

Eating For Health - Healthy Cookies Recipe

Berry Radical No Bake Cookie Bites

Ingredients - Makes 12 to 15 delicious cookies
2/3 cup almonds
2/3 cup walnuts
2/3 cup rolled oats
1/4 teaspoon ground cinnamon 
1/8 teaspoon sea salt
1/4 cup honey or raw agave nectar
2 teaspoon pure vanilla extract
3 tablespoons dark chocolate chips or raisins 

Method
1. In a food processor, process the almonds, walnuts, oats, Berry Radical, cinnamon and sea salt to a fine meal.
2. Add the honey and vanilla and process to combine.
3. Next, add the chocolate chips and pulse to combine.
4. Roll the cookie dough into balls (about 1 tablespoon each) and place them on a cookie sheet lined with parchment paper. Place the pan in the freezer for about an hour to firm up.
5. Store balls on a tightly covered container in the freezer.
